He is newly vegetarian, and his &#8220;girl friend&#8221; is vegan.  I know he&#8217;d be thrilled if I presented a special meal honoring her choice. </p>
<p>He wants to have a meal with her and watch a movie on our tv with her.  That movie is about Palestine, if that helps inspire a theme, but that&#8217;s not a necessary theme.  </p>
<p>What would you recommend?  Please explain techniques/ingredients that might not be readily familiar to a middle aged American.  </p>

I am looking for a gluten free potato dumpling recipe. I plan on using sweet potatoes/yams and would also like to use egg beaters and no butter. Can anyone help with this highly restrictive recipe? Thanks! I am making Chicken and Dumplings and want a gluten free dumpling recipe with some nutritional value to it!</p>
<p><strong>Best answer:</strong></p>
<p><i>Answer by *UT Lover*</i><br/>Prep time: 60 minutes</p>
<p>Ingredients:</p>
<p>1/4 c. butter, margarine, or olive oil<br />
2 large onions<br />
3 stalks of celery<br />
3 cloves garlic<br />
4 c. gluten-free chicken broth (available at most health food stores)<br />
2 c. water<br />
6 large potatoes, cut in 1/2 inch cubes<br />
3 eggs<br />
1/2 tsp. salt<br />
1/4 tsp. of pepper (fresh ground pepper is preferred)<br />
1 c. gluten-free flour mix<br />
2 c. of milk<br />
3 tsp. lemon juice<br />
salt and pepper, to taste<br />
dill (finely chopped) or shredded cheese (optional garnishes)</p>
<p>Utensils:</p>
<p>stove<br />
knife<br />
measuring cup<br />
measuring spoons<br />
Directions:</p>
<p>Soup</p>
<p>Heat oil or butter in a large soup kettle over low heat.<br />
Chop onions, garlic, and celery. (For a smooth soup, create a mash by running these ingredients through a blender or food processor.)<br />
Cook chopped or mashed mixture until onions are translucent or slightly caramelized.<br />
Add the chicken broth and water.<br />
Increase the heat to medium high and bring it to a boil.<br />
Add the cubed potatoes to the boiling broth, and cook until tender (about 10 to 15 minutes).<br />
Dumplings</p>
<p>Crack eggs into a bowl.<br />
Add salt and pepper.<br />
Slowly add the flour until you have a golden yellow, sticky dough. (If the dough comes out dry, add some water until it is sticky.)<br />
Drop the dough by spoonfuls into the boiling broth, and they will expand and lighten in color. It only takes a few minutes for them to cook.<br />
After the dumplings have cooked, reduce heat to low.<br />
Add the milk.<br />
Simmer for another 10 minutes, stirring occasionally.<br />
Garnish with dill or cheese, if desired, and serve.</p>

I found a great vegan parm substitute recipe on a website called the vivacious vegan, I remember it was made with raw cashews and a mixure of seasonings like season salt, garlic and onion powder and probably nutritional yeast flakes. Now I can&#8217;t get back to the site and I can&#8217;t remember all of the ingredients or the portions. If anyone has this recipe, please share it with me.</p>

I found a recipe with these ingredients in it in a &#8220;Healthy Cooking&#8221; or &#8220;Cooking Light&#8221; magazine. I have since lost it and cannot find it online anywhere. It may have had yogurt in it and celery too but I cant remember. I just remember making it and it was great!</p>
<p> If anyone knows of this recipe or any recipe pretty similar I would greatly appreciate it! <img src='http://www.healthycookingtoday.org/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Thanks in advance!</p>

<p><i>Answer by Polish Princess</i><br/>Creamy Waldorf Salad<br />
Created at New York´s Waldorf-Astoria Hotel in the 1890´s, this popular salad can be served throughout the year.</p>
<p>Ingredients</p>
<p>    4  cups (4 medium) cubed apples<br />
    1/3  cup chopped celery<br />
    1/4  cup halved maraschino cherries<br />
    1/4  cup chopped pecans or walnuts<br />
    2  tablespoons raisins<br />
    1/3  cup vanilla yogurt<br />
    1/3  cup mayonnaise<br />
    1/3  cup whipping cream, whipped</p>
<p>Directions<br />
    In large bowl, combine all ingredients except whipped cream; mix well. Fold in whipped cream. Store in refrigerator.<br />

Waldorf Salad</p>
<p>Apples, nuts and celery—a classic combination. The best part? You need only 10 minutes to throw it all together!</p>
<p>Ingredients</p>
<p>    3/4  cup mayonnaise or salad dressing<br />
    1  tablespoon plus 2 teaspoons lemon juice<br />
    1  tablespoon plus 2 teaspoons milk<br />
    3  medium unpeeled red eating apples, coarsely chopped (3 cups)<br />
    3  medium celery stalks, chopped (1 1/2 cups)<br />
    1/2  cup coarsely chopped nuts<br />
    Salad greens, if desired</p>
<p>Directions</p>
<p>    1.Mix mayonnaise, lemon juice and milk in medium bowl.<br />
    2.Stir in apples, celery and nuts. Serve on salad greens. Cover and refrigerate any remaining salad.</p>

The recipe is for puffed rice balls, and I think there are two recipes in there. Both require puffed rice cereal (like Rice Krispies), peanut butter, and orange juice. I&#8217;d like to get this recipe, but I can&#8217;t find it online, and I didn&#8217;t want to buy the book at the time. Can you help me?<br />
Thanks for the answers, but I&#8217;d prefer this recipe, or one with at least the same ingredients.. The point is that it&#8217;s healthy, just peanut butter, cereal, and orange juice ^^ Also, there was no cooking required, it was just mix everything together, roll into balls, and put into the refrigerator.. I&#8217;d know the recipe if I knew the proportions of the ingredients.</p>

<p>Puffed Rice Balls</p>
<p>6-ounce box puffed rice cereal<br />
2 cups sugar<br />
3/4 cup light corn syrup<br />
1/2 cup water<br />
1 teaspoon vanilla</p>
<p>Place puffed rice in a bowl. Combine remaining ingredients in saucepan and cook until mixture reaches soft ball stage (see note). While stirring constantly, pour mixture over puffed rice. Continue to stir until cereal is completely coated. Grease hands with butter and roll mixture into balls when cool enough to handle. Cover with plastic wrap.</p>
<p>Note: Soft ball stage means to heat the syrup to 234-240 degrees. It is at this point that a small amount of syrup, when dropped into very cold water, forms a soft ball that flattens after it&#8217;s removed.</p>
<p>Here&#8217;s another puffed rice ball recipe sent in by Ann K. Gunnin of Jasper, Ga. &#8220;Thanks to the generosity of a gentleman who had a Quaker Puffed Rice box from the 1930s listed on eBay, I now have the recipe for the famous Puffed Rice Balls Marianne Beck is looking for (the one her Mom used to make for Halloween). The recipe was listed on the back of the box and he was kind enough to send it to me, although I lost the bid on the box. And since one good turn deserves another, here it is.&#8221;</p>
<p>Quaker Puffed Rice Balls</p>
<p>1/2 cup corn syrup (light Karo syrup will do)<br />
1/2 cup molasses<br />
1 cup sugar<br />
2 tablespoons vinegar<br />
2 tablespoons butter<br />
About 6 cups puffed rice cereal</p>
<p>Boil syrup, molasses, sugar and vinegar until it snaps when tested in cold water (see note). Remove from heat, add butter, allow bubbling to die down, then pour over puffed rice. Mix well with a spoon and when slightly cool, form into balls.</p>
<p>Note: This recipe refers to the &#8220;hard crack&#8221; stage in candy making. Cook the syrup to 300-310 degrees (using a candy-making thermometer). To test, drop a small amount of syrup into very cold water. If the syrup separates into hard, brittle threads, it&#8217;s ready to be removed from the heat.</p>
<p>Makes about 10 baseball-sized balls.</p>
