Question by cassandra: What vegan recipe would you recommend to help celebrate my 15 year old son’s birthday?
He is newly vegetarian, and his “girl friend” is vegan. I know he’d be thrilled if I presented a special meal honoring her choice.

He wants to have a meal with her and watch a movie on our tv with her. That movie is about Palestine, if that helps inspire a theme, but that’s not a necessary theme.

What would you recommend? Please explain techniques/ingredients that might not be readily familiar to a middle aged American.

You can make pasta with tomato sauce and veggies like onions, spinach, zucchini, bell peppers, mushrooms and other veggies of your choice.

Or you can also make some good veggie sandwich .

Thanks! I am making Chicken and Dumplings and want a gluten free dumpling recipe with some nutritional value to it!

Prep time: 60 minutes

Ingredients:

1/4 c. butter, margarine, or olive oil
2 large onions
3 stalks of celery
3 cloves garlic
4 c. gluten-free chicken broth (available at most health food stores)
2 c. water
6 large potatoes, cut in 1/2 inch cubes
3 eggs
1/2 tsp. salt
1/4 tsp. of pepper (fresh ground pepper is preferred)
1 c. gluten-free flour mix
2 c. of milk
3 tsp. lemon juice
salt and pepper, to taste
dill (finely chopped) or shredded cheese (optional garnishes)

Utensils:

stove
knife
measuring cup
measuring spoons
Directions:

Soup

Heat oil or butter in a large soup kettle over low heat.
Chop onions, garlic, and celery. (For a smooth soup, create a mash by running these ingredients through a blender or food processor.)
Cook chopped or mashed mixture until onions are translucent or slightly caramelized.
Add the chicken broth and water.
Increase the heat to medium high and bring it to a boil.
Add the cubed potatoes to the boiling broth, and cook until tender (about 10 to 15 minutes).
Dumplings

Crack eggs into a bowl.
Add salt and pepper.
Slowly add the flour until you have a golden yellow, sticky dough. (If the dough comes out dry, add some water until it is sticky.)
Drop the dough by spoonfuls into the boiling broth, and they will expand and lighten in color. It only takes a few minutes for them to cook.
After the dumplings have cooked, reduce heat to low.
Add the milk.
Simmer for another 10 minutes, stirring occasionally.
Garnish with dill or cheese, if desired, and serve.

I found a great vegan parm substitute recipe on a website called the vivacious vegan, I remember it was made with raw cashews and a mixure of seasonings like season salt, garlic and onion powder and probably nutritional yeast flakes. Now I can’t get back to the site and I can’t remember all of the ingredients or the portions. If anyone has this recipe, please share it with me.

I’m switching my son to a gluten-free diet and he’s asking for meatballs. The ones I buy have wheat product in them. My daughter wants meatloaf. Anyone have a good gluten free recipe? I’d like to make lots of meatballs ahead of time and freeze them so freezing tips would be handy.

I found a recipe with these ingredients in it in a “Healthy Cooking” or “Cooking Light” magazine. I have since lost it and cannot find it online anywhere. It may have had yogurt in it and celery too but I cant remember. I just remember making it and it was great!

If anyone knows of this recipe or any recipe pretty similar I would greatly appreciate it! :) Thanks in advance!

Creamy Waldorf Salad
Created at New York´s Waldorf-Astoria Hotel in the 1890´s, this popular salad can be served throughout the year.

Ingredients

4 cups (4 medium) cubed apples
1/3 cup chopped celery
1/4 cup halved maraschino cherries
1/4 cup chopped pecans or walnuts
2 tablespoons raisins
1/3 cup vanilla yogurt
1/3 cup mayonnaise
1/3 cup whipping cream, whipped

Directions
In large bowl, combine all ingredients except whipped cream; mix well. Fold in whipped cream. Store in refrigerator.

Waldorf Salad

Apples, nuts and celery—a classic combination. The best part? You need only 10 minutes to throw it all together!

Ingredients

3/4 cup mayonnaise or salad dressing
1 tablespoon plus 2 teaspoons lemon juice
1 tablespoon plus 2 teaspoons milk
3 medium unpeeled red eating apples, coarsely chopped (3 cups)
3 medium celery stalks, chopped (1 1/2 cups)
1/2 cup coarsely chopped nuts
Salad greens, if desired

Directions

1.Mix mayonnaise, lemon juice and milk in medium bowl.
2.Stir in apples, celery and nuts. Serve on salad greens. Cover and refrigerate any remaining salad.
